Pancakes make a healthy breakfast for all, from kids to elders.

How to make fluffy pancakes for the win?

1. It’s all about the batter

A perfect consistency is required not much thick neither too flowy.

  • If it’s too thick, you will have undercooked hard pancakes.
  • If it’s too flowy, you will end up spreading out and your pancakes won’t be fluffy.

Tip– let the batter rest for about 10-15 minutes for making much more fluffy pancakes.

2. Use medium heat

Don’t be in a hurry to cook on high flame. You may end up burning the whole thing.

Also don’t be in a hurry to flip your pancake otherwise you might end up spilling it all.

3. Perfection on the stove

Heat a pan. Once it’s heated, sprinkle some water and wipe it off with a clean wipe or cloth. Next add some oil or butter and spread it evenly with a brush or a clean cloth.

4. Master the flip

If you are doing it for the first time, this tip is for you.

When to flip?

When you start seeing bubbles on the batter that’s the right time to flip.

Use a “good quality” and “clean” spatula. Slide it gently underneath the pancake and flip it with your “wrist” not the entire hand.

1. Apple Pancake Recipe

Let’s cook something yummy with that healthy apple.

Prep Time- 5 minutes

Cooking Time- 5 minutes

Total Time 10 minutes

Servings- 4

Ingredients

  • Apple – 1
  • Cinnamon powder- 1/4 tsp
  • Butter- 1 tsp
  • Sugar- 2 tsp
  • Milk- 1 cup
  • Flour (wheat/all purpose)- 1 cup
  • Baking powder- 1 tsp
  • Eggs (optional)- 1-2

Method

Sift the flour. I have used wheat flour here to make it healthy. Add 1 tsp baking powder. Set aside. Take the apple, peel and chop it roughly into pieces. Blend with milk and cinnamon (if using cinnamon sticks) Mix sugar and butter. Add the mixture. Start adding flour mixture part by part. Form a flowing mixture. Heat the pan. Add butter. Pour the mixture! Flip side. Cook until it turns brown. Serve hot

2. Lemon Ricotta Pancake

Cook Time : 10 minutes

Total Time: 20 minutes

Ingredients

  • Ricotta Cheese- 1 cup
  • Milk- 1/2 cup
  • Eggs – 2-3
  • Salt – a pinch
  • Sugar- 2tsp
  • All Purpose Flour- 1 cup
  • Baking Powder – 1 tsp
  • Zest of Lemon – 1
  • Oil for cooking

How to prepare?

  • Mix eggs well with sugar.
  • To this add ricotta cheese, milk and salt and blend thoroughly. Keep this aside
  • Now in a separate bowl sift flour and baking powder.
  • Start adding the dry ingredients to the batter in parts for better mixing.
  • Add zest of lemon.
  • Mix thoroughly. Cook on medium flame and serve hot.

3. Jiggly Souffle Japanese Pancakes

Fluffy, jiggly, airy, bouncy no I’m not talking about a dance form. It’s your new breakfast recipe.

These cylindrical pancakes are surely going to melt in your mouth.

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Servings: 4

What we need?

  • Egg yolk – 2
  • Sugar- 1/2 cup
  • Milk – 1/2 cup
  • All Purpose Flour – 1 cup
  • Baking powder – 1 tsp
  • Egg whites – 4
  • Oil/butter for cooking
  • Ring moulds

How to make Jiggly Pancakes

  • Mix egg yolks, sugar and milk in a bowl
  • Add all purpose flour and baking powder mixture to it. Combine well. Keep aside
  • In a separate bowl, take egg whites, blend it until it peaks. (Like cream)
  • Fold it nicely with the mixture.
  • Make sure your batter is airy and bubbly.
  • Place the ring moulds on the stove
  • Add the batter upto 3/4th of the mould.
  • Cover the pan and cook for 10 minutes on low heat.
  • Flip the pancakes and cook the other side for 5 minutes
  • Serve hot

4. Vegan Fluffy Pancake Recipe

Are you wondering if it is possible to make a “fluffy” pancake without eggs.

Yes it is possible! The key is to prepare an airy batter without eggs.

Let’s check out the Ingredients

  • Non Dairy Milk (of your choice) – 1cup
  • All Purpose Flour – 1 cup
  • Sugar- 2 tsp
  • Baking powder – 1 tbsp
  • Salt – 1/2 tbsp
  • Vanilla Essence- 1 tsp

How to Prepare?

  • Mix all the dry ingredients (flour, baking powder, salt, and sugar) in a bowl.
  • Boil some milk. Add vanilla essence and rest of the dry ingredients.
  • Mix thoroughly!
  • Serve hot

5. Banana Blueberry Wheat Flour Pancakes

So your kids bananas and blueberries? Try this pancake recipe. Loved by all. We make it super healthy by making with wheat flour.

Ingredients

  • Banana- 1
  • Blueberry – 1/2 cup
  • Butter- 1 tsp
  • Sugar- 2 tsp
  • Milk- 1 cup
  • Flour (wheat/all purpose)- 1 cup
  • Baking powder- 1 tsp
  • Eggs (optional)- 1-2

Preparation

  • Mix butter, sugar and milk in a bowl.
  • Mash a banana with fork and add it into the mixture. Combine well.
  • Sift the flour and baking powder, add it to the the mixture.
  • Place whole blueberries. Don’t mash.
  • Heat oil in a pan.
  • Place the batter, flip and serve hot.

Note: For baby led weaning, use only whole wheat flour plus mashed banana and add milk (use breast milk for feeding babies). Cook on medium flame with some ghee (or full fat butter). It’s a healthy recipe for babies 8 months and above.
